Macadamia beer nuts
If you know me or even read this blog you will know that I enjoy a beer or two on occasion. Last week while enjoying a cool Maui Brewing Co. Coconut Porter in the breezy sunshine of Upcountry Maui and snacking on the totally addictive Macadamia beer nuts we have been whipping up regularly, we reminisced of the fun of harvesting bananas in Hana and the monster bunch we cut down (54.5 lbs).
Suddenly I had an awesome thought, BANANA BEER BREAD! I know I am not the first to think of it but what about with Macadamia beer nuts in it, now we’re talking.
Coconut stout
I had one more coconut stout in the fridge, three or four frozen black bananas and if I stopped eating them now, I would have enough mac nuts left to make the bread. A quick modification to my standby banana bread recipe and I was up from my chair with pupose.
Make up a recipe of the Mac nuts to start and save the egg yolk for the banana bread. I like to make banana bread in two mini loaf pans when I can but use whatever bread pan you have available. I scraped in some of the crumbles of baked sugary bits from the nuts too.
The results were delicious moist banana bread with a hint of spiced stout and studded with salty/sweet macadamia nuts. You have to try this recipe!
- 1/3 cup of unsalted butter
- 1 cup of light brown sugar
- 1 whole egg plus 1 yolk (from the mac nuts)
- 3 super ripe bananas (black!)
- 1 tsp vanilla extract
- 1/3 cup Coconut Porter (Guinness is good too ๐ )
- 2 cups Flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- Pinch of salt, nutmeg and cloves
- 1/2 to 3/4 cup spiced mac beer nuts
- In a mixing bowl beat the butter and brown sugar together until light and kind of fluffy.
- Add the egg slowly to incorporate fully and then mix in the bananas and vanilla.
- In another bowl mix together the dry ingredients and then mix half into the banana mixture. Add in the beer and follow with the rest of the dry mix.
- Fold in the mac beer nuts and scrape well to make sure all is well incorporated.
- Spread the batter into your chosen buttered and floured bread pan and bake in a preheated 350F oven for 45 mins to an hour or until a toothpick comes out clean when poked into the middle.

Wow, this recipe’sideal for us. Our island’s celebrated for its banana plantations. But when summer comes, they go off quickly. Now we know how to use them other than in our five daily fruits. Thanks, guys.

Someday I hope to get over my hatred of bananas —- but the other ingredients sound good. Is coconut stout widely available outside of Hawaii?
Tim isn’t fond of bananas either but likes them in a bread. You might be able to find coconut porter in a specialty store, or use any other type of stout you like.
I love craft beer so would love to try that coconut stout! I never thought of adding beer to banana bread but it looks delicious!

Love it! We’ve got a bunch of bananas ripening in our driveway here on Kauai, hopefully just in time for German guests next month. My husband prides himself on his banana bread (“secret” ingredient: mini chocolate chips) so I’m going to share this recipe for his repertoire. Aloha!
We’ve been experimenting with all the bananas here, another good recipe is banana butter.
This banana bread looks and sounds great. I’ve not heard of Coconut Porter. I don’t know if I can get it in Manitoba, but I will look for it.

You had me with the beer right up until the coconut part ๐ I know, I know, the coconut is probably very subtle, and I do like banana bread….
You could always use a stout or regular porter instead of the coconut porter.
I need to save this recipe in case I get some flavored beer. Being from Wisconsin, I love my cheese and my beer.
Any dark beer would be good in this banana bread.
Now I need to go pick up some Guiness and Macadamia nuts. I love banana bread but I would enjoy it even more in the breezy sunshine of Upcountry Maui!

I’m going to have to pass on this one and just trust that it’s delicious as I’ve never been able to develop a taste/liking for beer. I think I may be the only one in the world, but it’s true. ๐
My sister is the same way but you can always omit the beer.
Sounds delicious and I’ll give it a try in August when I have access to an oven again. I always want to cook or bake during the travel times when we don’t have a fully stocked kitchen! Ah well…
