Making fresh pasta at home
Too often in America we eat without thinking, we buy over packaged, prepared foods and don’t always think about what we ingest. Some people eat strictly for fuel, not for enjoyment. In Italy, if you’re not eating, you’re talking about your next meal and it’s quite normal to spend a large portion of the day preparing a meal. Pasta is a staple in Italy and most Italians know how to make it from scratch. It’s easy, fun and so delicious.
In this video, Chef Tim shows you how to make several different pasta shapes.
- 1 egg
- 100g tipo 00 flour
- pinch salt
- Using 1 egg for each 100 grams of flour, double or triple depending on the shape and how much pasta you want to make.
- Form a volcano with the flour, add the eggs and pinch of salt and mix by hand until the dough is smooth. Wrap in plastic and set in a cool spot to rest.
- Or put ingredients in a food processor and pulse until a smooth ball of dough is formed, wrap in plastic and set in cool place to rest.

Homemade pasta tastes so much better than store bought and is much less expensive too. I remember my mother making egg noodles and draping them over the backs of chairs in the kitchen to dry. They were delicious in chicken soup. Great video – I’m inspired to give pasta-making a try!

One of things that is highest on my list of must see/do is to spend 3 months in Italy and take cooking lessons, I’d love to cook authentic Italian and learn to make pasta by hand, so your video is a good introduction. Damn, now I’m hungry so I better go eat some pasta!

I have made fresh pasta at home, although not for some time. I think my favourite shape is linguine – it’s dead easy to roll out and cut into strips.

My mother used to make home made egg noodles and there were sooo good. I’ve made them once or twice decades ago, but haven’t made any kind of pasta in recent memory.

I grew up on hand made pasta from scratch and really appreciate it so much more now in my adulthood. Holidays and weekends fresh pasta was a staple in our house. The women would wake up early in the morning to start making the sauce and dough then spend the whole day eating! It’s a cool tradition I hope to carry on. There is nothing like knowing how to roll your own fresh pasta!

There is something to be said for freshly prepared food and it is such a shame that some nations seem to have forgotten this. We have just spend 7 months in France where their supermarkets are made up of fresh produce with very little frozen or processed foods. Since coming home to the UK, I have really noticed the different, not only within the shops but also in the taste. We are now trying to recreate the healthy foods we had whilst away. We have to try this recipe.
